No bad apples here! 🍎🍏 we still have lots of apples left over from apple picking with the girls so I love to incorporate them into breakfast and snack recipes for the kids.
Since we have an egg allergy in the house, mama has to get extra creative with the baking so here’s a recipe for apple muffins or apple cake that is eggless and can be vegan with just one substitution. Since this recipe can be made without added sugars, it makes a great addition to breakfast or works perfectly as a snack.

Wet ingredients:
- 1/2 cup olive oil (you can sub for other neutral oil or melted butter if you prefer)
- 1/4 cup maple syrup
-1/4 cup brown sugar (optional, I don’t usually use it in this recipe but if you want it a little sweeter then go for it)
-100ml unsweetened apple sauce (one of those little snack cups)
1 tsp vanilla extract
2 tbsp 2% milk (can use almond/oat or any alternative milk if your choosing)

Dry ingredients
- 1 1/2 cups white or whole wheat flour
- 1/4 cup oats
- 1 tsp baking powder
- 1 tbsp chia seeds
- 1 tbsp ground flax seed
- 2 tsp cinnamon
- 1/2 tsp nutmeg

Filling
- 2 medium size apples chopped
- 1/4 cup walnuts crushed or chopped (can add more to your taste)

Directions
1. Preheat oven to 350°F
2. If using brown sugar, dissolve it in the oil and then add the remaining wet ingredients.
3. Add in dry ingredients sifting the flour and baking powder and combine, I use a whisk to keep it simple.
4. Fold in apples and walnuts.
5. Divide batter into muffin tins (makes about 16 muffins). I like to use silicone cups in the muffin tins for easy removal. You can also use a cake pan to bake it into a cake, but cooking time will change.
6. Bake muffins for 30-35 minutes. If baking a cake bake for 45-50 minutes but begin checking at around 40 min mark to determine how much longer it needs to bake.

We’ve been getting back into baking lately and m

We’ve been getting back into baking lately and my toddler has really enjoyed whisking ingredients together. This @padernokitchenware balloon whisk has a very sturdy design with a flat edge perfect for her to hold onto when she helps me bake. We’ve been using it to whisk eggs, thin batters and making homemade gummies so far but I’m sure we’ll be me making a lot more new recipes with the holidays coming. I will be getting rid of my old flimsy whisk and replacing it with this one.
